When Michele Obama challenged American schools to create healthy cafeteria recipes for a national competition, many Philadelphians sprang into action. This month's Art of Food segment chronicles the coming together of numerous forces, including a chef (Daniel McLaughlin), a non-profit (AUNI, the Agatston Urban Nutrition Initiative), and the Philly children and teens who participate in AUNI's cooking clubs, to create a delicious and healthy menu that any school would be proud to serve. Meg Ferrigno, the Nutrition Education Coordinator for AUNI, takes Friday Arts behind the scenes of the cooking clubs, and Chef Daniel shows us what it takes to lead a group of students and volunteers in cooking and serving healthy food for hundreds of kids during the time-crunch of a school lunch hour. We also watch as the new recipes are unveiled at a ceremony in front of local VIPs, including Iron Chef Jose Garces, and shared with the diverse and enthusiastic children of Drew Elementary School.
