A Chef's TableMake a sweet treat for that special someone this Mother's Day
How about this delicious parfait made with bright red strawberries? It's beautiful to look at and makes the perfect dessert for a Mother's Day brunch. Marinated Strawberry Rosé Parfait
Marinate the strawberries in the wine for one hour. Strain the berries, reserving the liquid, and puree in a food processor or a blender. In the top half of a double boiler, mix the egg yolks and sugar with a whisk until well blended. Slowly stir the reserved wine into the egg mixture, whisking continuously, until the mixture coats a spoon, about five to eight minutes. Remove from the heat and allow the mixture to cool completely in the refrigerator. Spoon one tablespoon of the crushed cookies into each of the parfait glasses. Top with a small amount of pureed strawberries, and then with some custard. Repeat with alternating layers, ending with the custard. Sprinkle with the cookie crumbs.
