Indian Pudding
For this recipe you will need:
1/3 cup stone ground yellow cornmeal To prepare this recipe: Combine the cornmeal, skim milk powder and boiling milk in the top of a double boiler. Cook, stirring constantly for 15 to 20 minutes. Stir in the dark molasses, oil, cinnamon, ginger and raisins. Add the eggs. Pour the mixture into a well-greased baking dish, and pour the cold milk over it. Do not stir. Bake the pudding for one hour at 325*. Serve warm with ice cream or heavy cream. This recipe makes 6 servings.
