Marinated Strawberry Rose Parfait

For this recipe you will need:

2 cups strawberries, cut in half
1 cup of rosé wine
8 egg yolks
8 tablespoons of sugar
2 cups of chocolate cookies, crushed

Marinate the strawberries in the wine for one hour. Strain the berries, reserving the liquid, and puree in a food processor or a blender.

In the top half of a double boiler, mix the egg yolks and sugar with a whisk until well blended. Slowly stir the reserved wine into the egg mixture, whisking continuously, until the mixture coats a spoon, about five to eight minutes. Remove from the heat and allow the mixture to cool completely in the refrigerator.

Spoon one tablespoon of the crushed cookies into parfait glasses. Top with a small amount of pureed strawberries, and then with some custard. Repeat with alternating layers, ending with the custard. Sprinkle with the cookie crumbs. Cover with plastic wrap and refrigerate until ready to use.

This recipe will serve 4 people.
