Fried Marinated Sardines

The Ingredients you will need are:

1 Pound Small, Fresh Sardines, Cleaned
1/2 Cup All-Purpose Flour
3/4 Cup Vegetable Oil
Salt and Freshly Ground Pepper
3 or 4 Bay Leaves
2 Medium Onions
1/3 Cup White Wine Vinegar

Cut the heads off of the sardines. Wash and dry the fish thoroughly. Spread the flour on a piece of aluminum foil. Coat the sardines lightly with flour. Heat half of a cup of oil in a skillet over medium heat. Cook the sardines 2 to 3 minutes on each side until golden. Drain on paper towels and season with salt and pepper.

Place the drained sardines in a shallow dish. Place the bay leaves on top and set aside. Heat the remaining oil in another skillet. Add the onions and saute over medium heat until pale yuellow. Add the vinegar and cook, stirring, for 30 seconds to a minute. Pour the onion mixture over the sardines. Cover and refrigerate 24 hours. Bring to room temperature before serving.

This recipe will serve 4 as an appetizer.
