Chef's Table Beef Filets with Horseradish Crumbs

The Ingredients you will need are:

3 tablespoons of dried Bread crumbs
2 tablespoons of drained Horseradish
1 teaspoon of Dijion Mustard
1/2 tablespoon of Butter
1 1/2 tablespoons of Olive Oil
2 - 8 ounce Filet Mignons
1 Red Onion, thinly sliced
1/2 cup dried Red Wine
1 teaspoon fresh Thyme

In a medium size saute pan over medium heat, cook the bread crumbs with the horseradish, mustard, butter, salt and pepper to taste until the crumbs are golden brown. Set aside. Wipe the pan clean. Add the olive oil and over high heat sear the filets for 1 minute on each side. Remove the filets and reduce the heat. Add onions and saute until wilted. Add red wine and thyme and reduce until almost all the liquid is evaporated. Place the filets in a preheated 450 degree oven for 5 to 8 minutes for medium rare. Serve the filets by spooning the onion mixture over the filets and top with the horseradish crumbs.
