CHICKEN COBB SALAD WRAPS

These sandwiches are very quick and easy - Prep time is 15 minutes! Makes 3 servings.

Ingredients:

  • 1-1/2 cups cooked chicken, shredded or chopped
  • 1 tomato, seeded and chopped
  • 1 avocado, peeled and chopped
  • 2 slices turkey bacon, cooked and crumbled
  • 2 tablespoons crumbled blue cheese
  • 1/4 cup Ceaser dressing
  • 3 (10-inch) whole-wheat flour tortillas
  • 1 cup bagged baby spinach leaves

Preparation

In bowl, combine chicken, tomatoes, avocados, bacon, and blue cheese. Drizzle the Ceaser dressing over the chicken mixture and stir to coat. This can be refrigerated easily for up to 2 days.

When ready to make fill the chicken/cobb mixture evenly into the tortillas, and top with the baby spinach leaves. Fold up bottom edge and fold in sides, and serve or wrap for a "lunch box."
