Super-Bowl Nachos

Ingredients:

  • 1 pound lean ground beef
  • 2 teaspoons chili powder
  • 2 teaspoons cumin and cayenne pepper
  • Pinch of salt
  • 1 can black beans
  • 1 12-ounce bag corn tortilla chips
  • 1 ¼ pounds Monterey Jack or Mozzarella cheese, grated
  • 1 large red onion, chopped
  • 2 large tomatoes, chopped
  • 1 6 oz jar sliced jalapeños
  • 1 small can black olives, thinly sliced
  • OPTIONAL:
  • Sour cream
  • Guacamole
  • Salsa

Directions:

Brown the ground beef in a skillet over med-high heat. Drain. Add the chili powder, cumin, cayenne, and salt. Set aside for a moment.

Spread a layer of chips on a large cookie or baking sheet, top with a layer of beans, cheese, ground beef, onion, tomato, and olives. Repeat until all the ingredients are used. This recipe usually is best with about 2 layers; you can top the last layer with all the jalapenos you can handle.

Bake in a preheated 375° oven until all the cheese is melted and everything is hot. Serve warm with sour cream, Guacamole and salsa, or SPAM if desired.
