Potato Pancakes (Latkes) for Hannukah
Peel potatoes, cut up and put in blender and grate. Or to do things the old fashioned way, grate with a hand grater.
Add 1 egg, salt and pepper to taste and enough flour to thicken to a good pancake batter consistency. Add grated onion and/or a dash of onion powder, if desired.
Heat oil until it sizzles. Drop a tbsp. at a time of batter into hot oil. Flatten with a pancake turner. When bottoms are brown turn them over. When done remove and drain on paper towel lined plate. Serve immediately with applesauce, sour cream or just plain.
