Shrimp Of Skewers

The Ingredients you will need are:

24 jumbo shrimp, peeled and deveined
3 cloves of garlic, minced
3 tablespoons of chopped fresh parsley
2 tablespoons of chopped fresh oregano
1/2 cup of olive oil
1/4 cup of brandy or white wine
salt and freshly ground pepper to taste

In a large bowl, combine all the ingredients. Mix well, and marinate at least one hour, or cover and refrigerate up to 4 hours.

Preheat your broiler, and remove the shrimp from the marinade. In a small saucepan, bring the marinade to a boil. Let it boil for 5 minutes, then set aside.

Thread six shrimp onto each of four metal skewers. Place the skewers on a broiling rack with a pan underneath to catch the drippings.

Broil the shrimp 3 inches from the heat, basting with the marinade and turning once, until golden on both sides. Cooking time should be about 10 minutes or so. Slide the shrimp off of the skewers onto individual serving plates. Pour pan juices over the shrimp and serve immediately with lemon wedges.

This recipe will serve 4 people.
