Super "Not" Nachos

For this recipe you will need:

  • 1 lb. lean ground beef
  • 2 teaspoons chili powder
  • 2 teaspoons cumin and cayenne pepper
  • Pinch of salt
  • 1 can black beans
  • 1 12-oz. bag corn tortilla chips
  • 1 1/4 lbs. monterey jack or mozzarella cheese, grated
  • 1 large red onion, chopped
  • 2 large tomatoes, chopped
  • 1 6 oz. jar sliced jalepenos
  • 1 small can black olives, thinly sliced
  • Optional: sour cream, guacamole, and salsa

1. Brown the ground beef in a skillet over med-high heat. Drain. Add the chili powder, cumin, cayanne and salt. Set aside for a moment.

2. Spread a layer of chips on a large cookie or baking sheet, top with a layer of beans, cheese, ground beef, onion, tomato and olives. Repeat until all the ingredients are used. This recipe usually is best with about 2 layers, you can top the last layer with all the jalapenos you can handle.

3. Bake in a preheated 375° oven till all the cheese is melted and everything is hot. Serve warm with sour cream, guacamole and salsa, or SPAM if desired.
