Mrs. Hanrahan's Sauce

For this recipe you will need:

  • 1/4 cup moist, soft, dark brown sugar
  • 1/4 cup port
  • 1/4 cup medium sherry
  • 6 1/4 cups lightly whipped cream
  • 4 oz butter
  • 1 egg

Any left-overs you may keep in the fridge, so you can use a little at a a time, adding whipped cream to taste. Works well with Plum Pudding, mince pies and other tarts.

Melt butter, stir in sugar and allow to cool slightly. Whisk the egg and add to butter/sugar mixture. Add Sherry and Port.

Refrigerate.

When needed, add the lightly whipped cream to taste.
