For the filling:
Combine all the dough ingredients and kneed dough until combined and set aside for 30 minutes. Divide dough into quarters - roll out to a 1/8 inch thickness - divide into two and half inch squares. Place a poached oyster and teaspoon of sausage in each square and fold over and crimp corners. Place in salted boiling water for 3-5 minutes. Remove and serve with your favorite sauce.
