Eileen Ryan's Irish Soda Bread
For this recipe you will need:
- 3 cups of flour
- 1/2 teaspoon of salt
- 1 teaspoon baking soda
- 2 cups of floured raisins
- 1/4 cup sugar
- 1 cup buttermilk
- 1 egg
- 1 tablespoon melted butter
Mix all dry ingredients
Add raisins
Mix together buttermilk with egg
Make a well in center of bowl and add 1/2 of buttermilk
Stir with fork
Add a little more buttermilk until it comes together
Shake flour on top of mix and knead it gently.
Butter 8 inch baking tin
Put mixture into tin press into corners
Brush melted butter over top make a sign of the cross
Bake at 350 degrees
Test at a half hour- if knife is clean take out or continue for another 15 minutes
Put cloth around bread and let it stand against the wall until it cools.
Slice and butter enjoy with tea and coffee
