Mrs. Claus' Welcome Home Holiday Ice Cream Pie

(serves one hungry Santa or 8-10 smaller appetites)

For this recipe you will need:

  • 20 oreo cookies (may also use prepared graham cracker crust)
  • 1/4 stick butter, melted
  • 1 1/2 qt. Vanilla ice cream
  • 1 tsp. Peppermint flavoring (extract)
  • 10 drops of green food coloring
  • 1 cup crushed candy canes

For the sauce:

  • 1 stick butter
  • 4 squares unsweetened chocolate
  • 3 cups sugar
  • pinch salt
  • 1 can evaporated milk

Crush the oreo cookies in a food processor and add the melted butter. Press into a 9" pie pan. Soften the ice cream, fold in the flavoring , food coloring and crushed candy cane. Pour into the pie tin and freeze. Melt the butter on top of a double boiler and drop in the chocolate for the sauce. Add the sugar a little at a time until dissolved. Add salt and stir in the evaporated milk and let cook until well blended. Pull ice cream pie out of the freezer. Garnish with whole candy canes and serve with the warm chocolate sauce.
