Homemade Rustic Harissa

For this recipe you will need:

  • 4 hot dried chilies (about 6 oz.)
  • 8 cloves of garlic roughly chopped
  • 1/2 Tbs. Ground coriander
  • 1 1/2 Tbs. Ground walnuts
  • 2 Tbs. Cilantro leaves
  • 1 Tbs. Fresh parsley leaves
  • 1/2 Tbs. Kosher salt
  • 1 Tbs. Tomato puree
  • 1/2 Tbs. Sugar
  • 4 Tbs. Extra Virgin Olive Oil

Simmer chilies for five minutes in hot water, remove from heat, and continue soaking for one hour in warm water. Drain. Add along with all remaining ingredients in a food processor and process until smooth. Keep refrigerated.

Makes approx. one cup.
