Coffee Cake with Blueberries

For this recipe you will need:

  • 2 cups flour
  • 1 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1 stick butter, melted
  • 2 eggs
  • 1/2 tsp almond extract
  • 1/2 tsp vanilla extract
  • 2 cups blueberries

Topping:

  • 1/2 cup all purpose flour
  • 1/2 cup sugar
  • 4 Tbsp butter, softened
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp ground nutmeg

To prepare cake:

preheat oven to 350 degrees F. grease and flour a pan appx. 8" x 10 1/2"

In a medium bowl, sift flour, sugar, baking powder and salt. In a large bowl, beat together milk, butter, eggs, vanilla and almond extract. Beat in flour mixture. Fold blueberries into batter and pour into prepared pan.

To prepare topping:

In a small bowl, combine flour, sugar, butter, nutmeg and cinnamon. Sprinkle topping on batter. Bake for 45 min. until lightly browned and cake tester inserted comes out clean.
