Feta Stuffed Tomatoes Greek Style

For this recipe you will need:

  • 2 tablespoons olive oil
  • 2 shallots, chopped
  • 1 cup spinach, chopped and cooked
  • 1 tablespoon fresh basil, chopped
  • 1 cup arugula, chopped and cooked
  • 1/2 cup bread crumbs
  • 1 egg
  • 1/2 pound feta cheese, crumbled
  • salt to taste, pepper to taste
  • 6 tomatoes, firm and with insides scooped out

To prepare this recipe:

In a saucepan, heat oil and saute shallots until translucent. In a bowl, combine the sauteed shallots with all remaining ingredients except tomatoes. Stuff filling into tomatoes. Bake in a preheated 350 degree F oven for fifteen minutes.

Makes four to six servings.
