Halibut Fillets Sautéed with Olive Oil and Vermouth

For this recipe you will need:

  • 1 pound fresh halibut fillets
  • 10 tablespoons extra virgin olive oil
  • 1 small garlic clove crushed
  • 1/4 cup chopped lemon thyme
  • 2 tablespoons chopped Italian flat leaf parsley
  • Juice from 1 large lemon
  • 1/2 cup vermouth
  • Sea salt
  • Freshly ground black pepper

To prepare this recipe:

In a large saute pan, heat the olive oil over medium-high heat. Place the halibut fillets in the pan and season with salt and pepper to taste. Turning once, sauté for three to four minutes before adding the garlic, lemon thyme and parsley. Saute for an additional two minutes and add the lemon juice and vermouth. Sauté for an additional two to three minutes or until the halibut cooked. Serve warm.
