French Fried Potatoes

The Ingredients you will need are:

6 large Frying Potatoes
Oil for frying
Salt and Pepper

Peel the potatoes and slice them lengthwise into 1/2 inch slices. Cut each slice into strips, again 1/2 inch wide. Place the potatoes in a large bowl of ice water for at least 30 minutes.

Dry the potatoes thoroughly in a clean dish towel. Heat the oil for deep frying until very hot. (You should be able to brown a one inch cube of bread in one minute). Carefully place the dry potatoes in the oil in a frying basket or with a slotted spoon, and fry until tender, but not browned. Remove the potatoes from the oil and drain them.

Just before serving, reheat the oil and fry the potatoes until golden, crisp and slightly puffy. Drain them very well, sprinkle with salt and pepper to taste, and serve the potatoes immediately.
