Cajun Salmon BLT

For this recipe you will need:

  • 2 - 4 oz. salmon fillets
  • 3 tablespoons Cajun spice mix
  • 2 oz. vegetable oil
  • 4 slices tomato
  • 2 leaves of romaine lettuce, ribs removed
  • 4 thick slices of bacon, cooked and nicely crisp

To prepare this recipe:

Heat vegetable oil in thick bottom cast iron frying pan until oil begins smoking.

Dredge salmon fillet in Cajun spice mixture. Place carefully in hot oil until salmon is blackened on both sides, about 2 minutes on each side.

Place lettuce, tomato, bacon and blackened salmon on bread. Slice in half and serve immediately.
