Fresh Corn & Tabouleh Salad

For this recipe you will need:

  • 1/2 cup fresh lime juice
  • 1/4 cup Tequila
  • 1/2 cup orange juice
  • 1/2 cup chopped fresh cilantro
  • 1 jalapeno pepper, chopped
  • 1/2 tablespoon chili powder
  • 2 cloves garlic, minced
  • salt and pepper to taste
  • 8 portabello mushrooms, stems removed

To prepare this recipe:

Mix all the ingredients except the portabellos in a mixing bowl and pour into a large zip lock bag & add the mushrooms. Seal and marinate overnight. Prepare the BBQ, grill to medium heat & brush the grill rack with oil. Grill the mushrooms until cooked through, turning occasionally about 8 to 10 minutes. Transfer to a platter.
