Fresh Corn & Tabouleh Salad

For this recipe you will need:

  • 1/2 cup bulgar wheat
  • 1 tsp. garlic, finely minced
  • 1/2 cup vegetable broth or V8
  • 2 tablespoons olive oil
  • 1/4 cup diced green apple tossed with 1/2 tablespoon of lemon juice
  • 1/4 cup raisins
  • 1 cup fresh corn kernals removed off the cob
  • 1/3 cup diced cucumber
  • 1/4 cup thinly sliced basil
  • salt & pepper to taste

To prepare this recipe:

Mix together the bulgur wheat with the garlic, vegetable broth & olive oil in a mixing bowl and set aside for 30 minutes.

Fluff the bulgur wheat with a fork and toss in the remaining ingredients.

Let rest another 30 minutes before serving. Serves 4
