Apricot Popcorn Cookies

For this recipe you will need:

  • 1/2 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup cornmeal
  • 1/3 cup melted butter
  • 1/2 cup sugar
  • 1 egg beaten
  • 2 tbsp sweetened condensed milk
  • 1 tbsp water
  • 1/2 cup ground popped corn
  • 1/2 cup chopped dried apricots

To prepare this recipe:

Sift the flour with the baking powder, nutmeg, cinnamon, salt and cornmeal.

Mix the butter, sugar, egg, milk and water.

Combine the butter mixture with the dried ingredients.While mixing add in the ground popped corn and dried apricots. Mix thoroughly.

Place onto a floured surface and roll to a 1/2 or 1/3 inch thickness.

Cut-out the cooled dough and place a on greased baking sheet. Bake in a preheated 425 oven for 10 to 12 min or until done.
