Holiday Latkes

For this recipe you will need:

  • 2 Cups shredded potatoes that have been well scrubbed
  • 1 1/2 Tablespoons grated onion
  • 3 eggs beaten
  • 2 Tablespoons flour
  • 1 1/2 tsp. salt
  • 1 tsp white pepper
  • 1/2 cup vegetable oil

To prepare this recipe:

Place the shredded potatoes in a piece of cheesecloth and wring out all the moisture.

In a mixing bowl, combine the potatoes with all the other ingredients except the oil and stir to combine. Place the oil in a heavy saute pan and place it over medium -high heat. The oil is ready when it is hot enough to brown a piece of potato in under 45 seconds. Place a large spoonful of the latke mixture into the oil and press down to make a patty. Brown on one side, flip and brown the other side. Drain on paper towels.

This recipe make between 10 and 12 latkes.
