In a large stock pot bring 3 qts of salted water to a boil. Add the manicotti shells & cook about 18 min or until Al Dente. Drain & rinse w/ cold water. In a medium mixing bowl stir together the eggs, mozzarella cheese, ricotta cheese, parmesan, salt & pepper. Stuff about a 1/3 of a cup of mixture into each shell & place the shells in a baking dish. Pour the tomato sauce on to the manicotti and top with the roasted vegetables.
Bake uncovered in a 350 degree oven for 30-35 minutes or until thoroughly heated.
Serves 4 people.
