Tequila Green Chile Sauce

For this recipe you will need:

1 pound Anaheim Chiles
1 Large Jalapeno Pepper
1 cup of water
1 teaspoon dried oregano
1/2 teaspoon ground cumin
2 Tablespoons of Tequila
Salt and Pepper to taste

To prepare this recipe:

Roast the Chiles on an open flame or under the broiler. Turn over until they are black on all sides. Place the Chiles into a plastic bag and keep them in there until they have cooled down. Remove the skin and stems. Coarsely blend the Chiles with all other ingredients in a food processor or with a blender. Do not puree this mixture, it should remain chunky. This sauce goes very well with chicken, shrimp or pork dishes. The recipe makes one cup.
