Fava Beans with Pecorino Cheese and Truffle Oil

For this recipe you will need:

1 Lb of fresh or frozen Fava Beans that have been shelled
1/4 Lb of fresh Pecorino Cheese
3 Tablespoons of Truffle Oil
1 Tablespoon of chopped fresh Rosemary
Salt and Pepper to taste

To prepare this recipe:

Place the beans in a large mixing bowl and toss with the truffle oil, salt, pepper and rosemary. (If you are using fresh Fava beans, you should blanch them, frozen Fava beans usually don't need to be blanched.) Either refrigerate over night or leave at room temperature for an hour. Serve with crusty bread.
