Miami Frozen Fantasy

For this recipe you will need:

3 cups graham cracker crumbs
3/4 cup (1 1/2 sticks) butter, melted
1/4 cup (packed) light brown sugar
3/4 quart lime sorbet, slightly softened
1/2 pineapple, peeled, cored and diced
1 ripe papaya, peeled, seeded and diced
1 ripe mango, peeled, pitted and diced
2 pints fresh strawberries, stemmed and hulled or raspberries
1/4 cup toasted coconut flakes

To prepare this recipe:

In a mixing bowl, thoroughly combine the crumbs, butter and brown sugar. Press the mixture over the bottom and sides of a 9-inch springform pan and transfer to the freezer for 15 minutes. Remove the pan and spread the sorbet evenly over the crust. Refreeze for about 45 minutes, or until firm.

Place the pineapple, papaya, mango and berries in a mixing bowl and toss well to combine. Remove the pan from the freezer and release the sides of the pan. Cut into 8 slices, transfer to serving plates and spoon the fruit mixture over each serving. Garnish with the toasted coconut flakes.
