Jim Coleman Recipes

For this recipe you will need:

2 cups of all-purpose flour
1/3 cup of granulated sugar
2 tablespoons of baking powder
Pinch of salt
1/3 cup of butter, unsalted
1/2 cup of heavy cream
2 eggs beaten (in separate bowls)

Sift together the dry ingredients in a bowl. Cut the butter into small pieces and blend into the flour mixture with a pastry blender. The mixture should look like coarse crumbs. Combine the cream and one beaten egg in another bowl, and then add to the flour mixture. Stir until just combined and knead gently. Roll or pat the dough on a lightly floured surface cut it into rounds with a cookie cutter. Put the scones on a baking sheet lined with parchment paper. Brush the scones with the second beaten egg. Bake at 375 degrees for approximately 15 minutes or until lightly browned. Serve warm with different jams and jellies.
