4th of July Red, White, and Blue Shortcake
For this recipe you will need: For the Shortcake: 2 Cups of All Purpose Flour In a large bowl, combine the flour, sugar, baking powder, add salt. Cut in the butter until the mixture looks like coarse crumbs. In a seperate bowl, combine the egg, milk, and vanilla and add at once to the dry mixture. Stir just enough to combine. Drop the dough in 8 mounds on a cookie sheet and flatten slightly with the back of a spoon. Bake in a preheated 450 degree oven for about 10 minutes or until golden brown. Cool on a wire rack. For the berry mixture: 6 Cups of mixed berries like blueberries, raspberries, sliced strawberries Mix together and let stand for about 15 minutes. For the whipped cream: 1 Cup of Whipping Cream Slice each shortcake in half horizontally. Top bottom halfs with half of the whipped cream and berry mixture. Top with other half of shortcake repeat with a layer of whipped cream and berries.
