4th of July Red, White, and Blue Shortcake

For this recipe you will need:

For the Shortcake:

2 Cups of All Purpose Flour
1/4 Cup of Sugar
2 teaspoons of Baking Powder
1/4 teaspoon of Salt
1/2 Cup of Butter
1 Egg Beaten
2/3 Cup of Milk
1 teaspoon of Vanilla Extract

In a large bowl, combine the flour, sugar, baking powder, add salt. Cut in the butter until the mixture looks like coarse crumbs. In a seperate bowl, combine the egg, milk, and vanilla and add at once to the dry mixture. Stir just enough to combine. Drop the dough in 8 mounds on a cookie sheet and flatten slightly with the back of a spoon. Bake in a preheated 450 degree oven for about 10 minutes or until golden brown. Cool on a wire rack.

For the berry mixture:

6 Cups of mixed berries like blueberries, raspberries, sliced strawberries
1/4 cup of sugar

Mix together and let stand for about 15 minutes.

For the whipped cream:

1 Cup of Whipping Cream
2 tablespoons of Sugar
1/2 teaspoon of Vanilla Extract
Whip until soft peaks form

Slice each shortcake in half horizontally. Top bottom halfs with half of the whipped cream and berry mixture. Top with other half of shortcake repeat with a layer of whipped cream and berries.
