Alsatian Onion Tart

For this recipe you will need:

For the shortcrust:

5 ounces all-purpose flour
2 1/2 ounces butter
1 egg, beaten
cold water

For the filling:

1 1/2 pounds yellow onions, peeled and thinly sliced
1 1/2 tablespoons butter
2 eggs, beaten
1 cup cream
salt and pepper to taste
2 tablespoons freshly chopped thyme

To prepare this recipe:

To prepare the shortcrust: Cut the butter into the flour with a pastry cutter or knives until it is well incorporated. Mix in the egg and just enough cold water to make a pliable dough. Chill for 30 minutes. Roll the pastry out very thin on a lightly floured board. Gently lift the pastry and line a 9-inch tarte pan or pie pan.

To prepare the filling: Sautè the onions in the butter over medium heat until golden brown, about 12 to 15 minutes. Mix the onions together with the eggs, cream, salt, pepper and thyme. Pour the filling into the prepared pastry-lined pan, and bake at 375 degrees for 40 minutes or until done.
