Braised Kale
For this recipe you will need:
2 pounds of Kale, stems removed and chopped
1 cup of chicken stock
1/3 cup of light brown sugar
1/2 cup of rice wine vinegar
2 shallots, chopped
2 cloves of garlic, chopped
1/2 teaspoon of caraway seeds
2 tablespoons of Olive Oil
2 bay leaves
salt and pepper to taste
To prepare this recipe:
Combine all the ingredients except the salt and pepper in a 10-quart pot and bring to a boil. Reduce the heat, cover, and simmer over low heat for 1/2 hour. Season with salt and pepper and serve hot.
