Old Fashioned Kugel

For this recipe you will need:

1 Pound of angel hair pasta, broken into 2-inch pieces
1/2 cup of vegetable oil
1/4 cup of granulated sugar
1 teaspoon of salt
1/2 teaspoon of black pepper
4 large eggs, beaten
1/2 cup of raisins

To prepare this recipe:

Cook the Pasta according to package directions and drain. Preheat the oven to 325 degrees. Put the vegetable oil and sugar in a 6-quart pot over medium heat. Cook, stirring, for 4 or 5 minutes, until the sugar melts and gets dark brown.

Add the well-drained pasta, stirring constantly until the pasta is well-coated. If the sugar solidifies, keep stirring until the sugar melts again.

Remove the pasta from the pan and stir in the salt and pepper. Let cool down for about 30 minutes, until still lukewarm.

Stir in the beaten eggs and fold in the raisins. Place the mixture into a 8-inch round pan and put it in the oven. Bake for 20 to 35 minutes, until the top is golden and crisp.

Allow the Kugel to cool down for five minutes, cut into wedges and serve.
