Candy's Baked Pheasant

For this recipe you will need:

2 cleaned pheasants
6 uncooked strips of breakfast bacon
2 large onions, chopped
3 ribs celery, chopped
3 cups beef broth
1/2 teaspoon dried marjoram leaves
salt and pepper to taste

To prepare this recipe:

Preheat the oven to 300.

Season the pheasants inside and out with salt and pepper. Place half of the chopped onion and celery into the cavities of the birds. Arrange 3 strips of bacon across the breast of each bird. Place the pheasants, breast-side-up, in a baking pan. Add the broth and marjoram, and sprinkle the remaining onions and celery around the birds. Place the pan in the oven, and bake for approximately 3 hours, basting every 20 minutes.

This recipe will serve 8 people.
