Zucchini Vegetarian Chili Pasta

For this recipe you will need:

Ingredients

  • 9 roma tomatoes
  • 3 small tender zucchini
  • 1 small yellow summer squash
  • 1 red onion
  • 1 ear of corn, cooked and kernals removed
  • 3 small sweet potatoes, diced, boiled and drained
  • 1 can red kidney beans
  • 1 bunch chopped parsley
  • salt, pepper to taste
  • dash of chili sauce
  • 1 pound box of small elbow macaroni, cooked and drained and reserved

Dice zucchini, yellow squash, red onion, and tomatoes. Spread out on a sheet pan and broil until vegetables are tender and beginning to brown. Combine all your ingredients except the pasta and simmer until heated through (about 30 minutes). If necessary, add a little liquid. Just before serving toss with pasta. Serve warm or room temperature.
