Filling
Fruit Glaze
In a large bowl, combine 1 cup flour, sugar, undissolved yeast, and salt. Stir water and peanut oil into flour mixture. Stir in enough remaining flour to make a soft dough. Knead on lightly floured surface until smooth and elastic, about 8 to 10 minutes. Cover; let rest 10 minutes. Pre-heat oven to 500?F. Roll dough to 16-inch circle to fit a greased 14-inch deep-dish pan, sprinkled with cornmeal. Press dough into bottom and 1?-inches up side of pan. Sprinkle evenly with Mozzarella cheese, tomatoes, sauce, oregano and Parmesan cheese. Place mini-hamburgers evenly on pizza; top with sliced tomatoes, shallots, basil and Cheddar cheese. Pre-heat oven to 500F; immediately reduce heat to 400F. Bake 15 minutes or until crust is deep golden brown. Remove from oven; cool on wire rack. This crust must be completely cooled before filling. Whip cream cheese in a food processor until it is fluffy and has no lumps. Add the rest of the ingredients except for the cream and process until it is well blended. Add the cream and whip until it is thick. Spread the mixture evenly on the cooled crust. Slice fruit and lay on top of the filling decoratively or chop it and sprinkle on top for that "pizza supreme" look. Bring glaze ingredients to a boil, stirring constantly. Once it is boiling, stir for 1 minute or until mixture looks clear. Remove from heat and spoon evenly over fruit.
